AT WORK WITH THE ROLLIN' HOT DOG CO.


The pop-up scene in Cardiff is starting to slowly gain momentum. From Hang Fire Smokehouse, Chucks and Got Beef there has been a steady curiosity towards this style of dining. Many of us are already experienced and educated in the street food scene in bigger cities like London, so the fact that Cardiff is embracing this is a step in the right direction. So imagine my delight to discover that Holly Mcdonald has joined the ever-evolving food scene in Cardiff.

I first met Holly a couple of years ago during her Tiger Bay Brawler days and got to work alongside her. So it was a real treat to spend time with her discussing her love for her business and how overwhelmed with the reactions she's gotten. Cardiff has really embraced The Rollin' Hot Dog Co. and with a passion and dedication like Holly's, it's easy to see why.

 Why Holly started The Rollin' Hot Dog Co.:
"I have always had a love affair with American food. There's something about eating an enormous, messy portion that makes me feel like I've stepped back in time to a diner in the 50s, and I jumped at the chance to be able to bring an American classic to the streets of Cardiff. I saw the cart and after a short deliberation over what to serve from it, I decided on hot dogs. I have since become completely obsessed with hot dog toppings, and have realised that my destiny is to create them. Really. It's all I think about!"



 On what inspires her menu:
"The internet is great for researching the classic flavours and from there I have looked into updating classic recipes with little twists. I had no idea cream cheese tasted good on a hot dog until I read about a bagel seller in Seattle who used to use his leftover bagel ingredients on hot dogs to serve to people leaving nightclubs in the late 80s. It's become a staple topping in America but isn't something we see a lot over here. I loved it so much, I've included it twice on my opening menu."

 One year from now:
"In a year, I'd love to be able to say I'm still making a living from doing what I love. I want to be able to travel to festivals when the weather is nice and most importantly, I will have had time to develop new ideas for flavours, and maybe even looking into making my own sausages, that would be the dream."

The cart will be on Womanby Street at the Fashion Quarter Tuesday-Saturday from 11.30-16.30
