SCOTCH EGG RECIPE

I love scotch eggs and was really excited to make some from scratch. I found a simple recipe in a Sainsbury's magazine and stuck to that, and it's fairly simple to adapt should you want to experiment and add different ingredients. It's also worth checking out The Handmade Scotch Egg Company for some ideas to make yours a little bit unique!

Recipe (makes 6)

6 medium eggs

375g sausage meat

1 tbsp flat-leaf parsley

1 medium egg beaten

90g breadcrumbs

1. Boil the eggs for about 8 minutes and then plunge into cold water, let them cool slightly and then peel off the shells.

2. Pre-heat the oven to gas mark 5, and mix the sausage meat and parsley, then wet your hands and begin dividing the meat into patties. Make sure they are flat and then place an egg into the centre, and wrap it around the egg, covering it completely.

3. Dip into the beaten egg and then into the breadcrumbs, once completely covered, put on a baking tray and bake for 25 minutes until golden.
